My friend, Chrissy, shared this recipe with me years ago and from time to time, I will make a batch of these delicious protein bites which are perfectly satiating for a quick breakfast, or healthy snack after work when dinner is still a couple of hours away and you need to squeeze in a workout or some chores. You can vary the mix-ins with whatever you like, or substitute peanut butter for almond butter, but I am stuck on the chocolate-walnut combo. Here’s how to make them.
Ingredients
2 cups quick oats
1 cup flaxseed
1 1/2 cup peanut butter
1 teaspoon cinnamon
1 1/2 tablespoons chocolate protein powder
1 tablespoon honey
1/2 cup bittersweet chocolate chips, such as Ghiradelli
1/2 cup walnuts, lightly chopped
Recipe
Mix dry ingredients in a medium bowl with a whisk.
Add peanut butter and mix thoroughly with a spatula.
Line a cookie sheet with wax paper. Wet your hands and roll the mixture into the size of a golf ball. Set the balls on the tray and place in the fridge to harden.
Store between sheets of wax paper in a sealed container in the refrigerator for up to two weeks.
