Why not make your own crackers? This variety is super-savory, and the dough can be made well in advance and frozen, ready to slice and bake before you need them. The addition of thyme adds a wonderful aroma to your house as they bake. Here’s how to make them:
Ingredients
3/4 cup all-purpose flour
1 teaspoon coarse salt
1/4 teaspoon white pepper
2 teaspoons thyme leaves, stripped from stems
3 tablespoons butter, chilled and cubed
1 cup Parmesan cheese, finely grated
5 tablespoons sour cream
Recipe
1. Pulse flour, salt, pepper and thyme in a food processor until just combined. Add butter and pulse until the mixture resembles coarse meal. Add sour cream 1 tablespoon at a time, pulsing each time until combined.
2. Transfer dough to the counter. Roll into a log, about 1.5″ around. Wrap the log in plastic and refrigerate overnight.
3. Heat oven to 325°F. Slice the chilled log into 1/4″ slices and space evenly on a Silpat or parchment-lined baking sheet. Bake for 25-30 minutes, or until the crackers are golden brown around the edges. Transfer to a cooling rack.
